Eating the right foods! and SLOW Down.

Its amazing how making wise food choices really helps you feel so much better! Our society tends to forget that food is our fuel! Yes, God gave us a lot of variety to chose from but ultimately it is what keeps us energized and keeps us going. Lets talk about cars for a second. I am no car expert but I do know that you would never want to put the regular graded gas in a diesel engine, or a nice BMW/LEXUS/Ferrari/ etc. It would do horrible things to the engine. It wouldn't run properly and it could also potentially cause damage. You also wouldn't want to over flow a gas tank when filling up a car because gas is expensive! We don't want to waste things, do we? By over filling a gas tank you run into the possibility of damaging the fuel gauge and it could become inaccurate. Or the biggest problem is that it can wreck the evap system. This collects gasoline fumes from the tank and routes them to the engine for combustion.


HMMMM does this sound familiar at all??? Many of us Americans don't only choose poor food choices but we also over eat! When we over eat we no longer can "trust" our instincts or hunger pangs. They become in accurate. One of the biggest lessons I am learning is the importances of not rushing meals. I have always been a fast eater. Since Mitchell's and I's first date over 6 years ago I have always finished eating before him. Why----because I INHALE my food. When we eat fast, we run into the possibility of not fully chewing our food which is a major part of our digestion process or we eat to much and there for our body does not have the time to tell us we are full. If we slow down chances are we will not only enjoy our food and experiences more but we will also be able to get a better "notification" of being full! We should stop eating when we are 80% full and not STUFFED!


Crock pot basque pork stew- from Paleo Recipe Book.


• 2 lbs stewing pork cubes;

• 2 onions, chopped coarsely;

• 1 cup chicken stock;

• 2 tbsp tomato paste;

• 2 bell peppers, cored, seeded and cut into strips;

• . lb good quality ham, cut into strips;

• 10 cloves garlic, minced;

• 1 tsp paprika;

• 1 tsp dried thyme;

• . tsp red pepper flakes;

• 1 orange, zested and flesh coarsely chopped; (I would use 1/2 an orange next time! It was very strong)

• Cooking fat; I used Coconut oil

• Sea salt and freshly ground black pepper


Season the pork cubes to taste with sea salt and freshly ground black pepper. Heat a large skillet over a medium heat and brown the pork cubes with some cooking fat. Place the browned meat in your crock pot and now add the onion and cook until translucent, about 7 minutes. Add the stock and tomato paste to the skillet and bring to a boil. Pour the hot liquid in with the pork cubes in your crock pot along with the orange zest, orange pieces, bell peppers, ham, garlic, paprika, thyme and red pepper flakes. Season to taste with see salt and freshly ground black pepper and set to cook on Low for 6 to 8 hours.
