Momma Thornton's Thai Soup 

For Dinner I tested out a new recipe of my friends from 4girlsandmom! I was really nervous to see if Mitchell was going to enjoy it and he said it was "pretty good"…. I will take that as excellent feed back! Mitchell enjoys the simple things in life! There are many days that I wish I lived more simply :) This picture doesn't do the Picture justice but it was sooooo decadent and our apartment had a very clean ginger/lemon aroma! This Thai Soup is going to be a favorite of mine!

I decided to document my Grocery Shopping experience for some of you because somethings may be unfamiliar…. So here you go! I started shopping at Fresh Market thinking I wouldn't be able to get Lemon Grass at Food Lion…. Well guess who didn't have fresh Lemon Grass (FRESHMARKET!) So I ended up going to Food Lion!!!! So Far there Isn't anything at Fresh Market that I have had to have! (Maybe their salsa and the Spicy Pico Guacamole)


Ingredients

6-8 cups of water

4 to 5 chicken breasts

2 Tbs. unrefined salt

1 large onion (I used a half because I need the other half for a recipe later this week)

2 Tbs. minced garlic ( I had fresh cloves at home so I used 6 cloves pressed)

1 green pepper, chopped

1 red pepper, chopped

1-2 jalapeños, chopped and mostly seeded ( I used one small jalapeño my husband doesn't enjoy spicy food)

2 stalks of lemon grass (outer layers removed) Try to find fresh lemon grass If you can't find it you can use dried but I would suggest having a herb bundle made from cheese cloth and Kitchen twine. The dried lemon grass doesn't seem to get tender.

2 cups carrots, chopped

2 cups celery, chopped

1 four inch piece raw ginger, peeled and chopped

1 bunch spinach ( I would chop this finely for the next time)

1 bunch cilantro, chopped

1 tsp. turmeric

1 tsp. pepperjuice of 3 limes)

1 carton chicken broth (One day I'm going to make my own chicken broth!!!)

2 cans coconut milk (full fat, rather then the Carton or quart- canned coconut milk is less processed. I usually can find it in the Latin American section of the Grocery store!)


Directions

In a 5 or 6 quart stock pot, add the the first four ingredients. Let the chicken simmer for about 10-15 minutes, while cutting up the next 8 ingredients. Take chicken out and let cool. Next, add the vegetables into the stock pot with the broth from the chicken and let them simmer for 20 minutes. While vegetables are simmering, dice the chicken. When vegetables are done, add the chicken back to the stock pot and add the last ingredients. Let these ingredients heat up and get your bowls ready! Finish off with Red pepper flakes sprinkled in your bowl if you wish!!!
