I get so excited over food!

Do you ever get super excited over the food you prepared? I know how you feel. Tonight I opened my fridge and knew just what I wanted.

This may look like just an ordinary salad but it's jam packed with flavor and nutrients! I started by making my dressing. 

 

Lemon Ginger

ginger root

mustard seeds

1 garlic clove

1/2 cup olive oil

Peel the ginger root skin then discard skin and add the root to blender with mustard seed, olive oil, and  garlic. Zest and juice the lemon. Then blend all ingredients. 

 

Salad:  

watercress

fennel root finely sliced, a few(to taste)  fennel sprigs chopped.

fresh basil chopped, 

fresh cilantro chopped

a bit of edemama (because it was in my fridge :) ) 

grilled chicken 

fresh ground pepper and sea salt to taste!!!

 

 Fennel is rich in calcium, magnesium, potassium, Vitamin C and Folic acid. It helps digest fats and therefore is good for weight control.

 Lemons are rich in vitamin C, pectin and potassium. Vitamin C increases the rate of urination, thus helping your body flush toxins faster; it also kills certain bacteria known to cause acne and boosts the immune system.

 Mustard Seeds are an excellent source of selenium and a very good source of omega-3 fatty acids and manganese. They are also a good source of phosphorus, magnesium, copper, and vitamin B1.

  Watercress boosting immunity, cancer preventive, and thyroid support.

  Ginger ginger has a long tradition of being very effective in alleviating symptoms of gastrointestinal distress, nausea and so much more! It's been called one of the healthiest foods on earth!

To be honest a year ago I'd probably never eaten a few of those things but man do I love them now! I love trying new foods. Give it a try your belly will thank you!
