Cucumber Quinoa Salad

Here is a super easy, flavorful, protein-packed salad that everyone will love!

Cucumbers are an excellent source of vitamin K and molybdenum. They contain potassium, which is associated with lower blood levels and are low in calories.

Quinoa is one of the most protein-rich foods that we can eat. It is gluten-free, rich in magnesium, and contains almost twice as much fiber as most other grains.

 

Minutes to Prepare: 10

 INGREDIENTS:

1 English cucumber, diced

2 cups chilled cooked quinoa

1/2 cup diced red onion

1/2 cup crumbled feta cheese

1/3 cup  roughly-chopped fresh basil leaves

1 batch Lemony Italian vinaigrette (ingredients below)

 

LEMONY ITALIAN VINAIGRETTE:

1/4 cup olive oil

2 tablespoons apple cider vinegar

1 tablespoon fresh lemon juice

1/2 teaspoon Italian seasoning

Pinch of salt and pepper

 

DIRECTIONS:

Toss all ingredients together until combined.

 

Mix ingredients of lemony Italian vinaigrette together until blended. Apply to salad.
