Weightloss is NOT Linear.

If you are reading this blog or follow me on social media, then you probably have an idea of how I feel about the scale. Sometimes that little reminder that the scale only measures one factor isn't enough. So today I want to paint a little picture.

 

Imagine you are managing a business. On Monday your sales are 50% higher then normal. Then Tuesday, Wednesday and Thursday they are normal. Friday they are up 25%. Saturday the sales drop a bit by 2% and Sunday they drop 10%.

 

Yea, Saturday and Sunday were not great days at all. They actually kinda sucked for business. But Monday and Friday had better sales then you have seen in months. Do you completely change your business model because your sales were low on Saturday and Sunday at a risk of never having days like Monday and Friday? 

 

Now, you probably wn't find my picture on the corner of Forbes Magazine anytime soon, but I am pretty sure it would be pretty foolish to abort your plan because you had two days of business that were a little below normal. Sure some strategic planning and analyzing may take place but you certainly wouldn't want to make any drastic changes. Your plan worked WONDERS on Monday!

 

Weightloss can be really similar to this at times. Some days you may see a drastic drop on the scale, inches lost, and an overall increase of energy. Then a few days or weeks later your scale might actually have gone up. Does that mean you are gaining fat? Does that mean you are no longer losing fat? It most certainly does not. It just means your body is changing. It's probably working to build muscle. OR it's preparing to do a HUGE elimination in the next few days. (I think you know what I'm talking about)

 

A lot of times people start to see awesome changes take place in the beginning and they begin to 1. Loosen the reigns or 2. Start to tighten them in hopes to see quicker results. We have become sooo accustomed to wanting quick results daily that we forget to take a step back and evaluate the overal achievements we have made! It's ok if you have small steps in the "wrong" direction as long as the bigger picture shows an overal increase in the right direction. 

 

Weightloss is not linear.... And I still think you should drive a sledge hammer through your scale 🤓😳🤔

Cilantro Lime Chicken and Rice~[Amazing 12 Compliant]

So its week 2 of Amazing 12 for the current round. My husband and I are also taking part of this round. After week 1 He asked for a little more variety in cooking. So I brainstormed a bit. Used many of the Amazing 12 provided recipes and then added my own creativity. I have a bit of a problem when it comes to cooking... I don't like to follow directions. When I make something from a recipe (unless its baking) I just look at the ingredients and cooking temps then throw it all in. I don't measure, I don't use all the ingredients, and sometimes I even add ingredients. So this Cilantro Lime Chicken stemmed from one of those moments! Let me tell you, Its so good! I have eaten it 3 times this week lol (Maybe that wasn't what my husband meant by variety... OOPS)

What do you need:
1 Bunch of Cilantro
4 Garlic cloves
2 limes
1 carton of chicken broth (or min 2 cups)
1 cup of Brown rice
2-4 chicken breasts
2 cups of water
salt and pepper to taste
Large Ziplock Baggie for marinading

So first prep your food!

  1. un-leaf and Chop all that cilantro... yes all of it. 1/2 goes in the baggie for the marinade, half goes in the rice cooker or pot.
  2. Mince or Press the Garlic cloves placing 2 in a baggie and 2 in the rice cooker or pot.
  3. Zest 1 lime for the Marinade, zest the other for the Rice
  4. Use the juice of 1.5 limes for the marinade, the other half lime for the rice
  5. add a little salt and pepper to both the rice pot and marinade
  6. Place 1 cup of rice and 2 cups of chicken broth in the rice cooker or pot. Cook according to Directions on label
  7. Clean your chicken breasts, cut off any fats, veins, or unwanted meat. Add breast to the marinade.
  8. Add 2 cups or more of water to cover the chicken in the marinade 
  9.  Seal it and stick it in the fridge for 10 mins -2 hours (You could even do over night if you wish)

Cooking the chicken

  1. I like to use a Grill pan on my stove top. You could easily use a regular pan or grill.You can also bake the thawed chicken in a 375 degree F oven for 15 minutes, or until cooked through.
  2. Using a Grill pan heat Olive oil at medium-high heat
  3. Remove the chicken from the bag and grill it over medium-high heat. Rotate the chicken on both sides continue grilling until the chicken is cooked through, 4 to 5 minutes per side.

Serve: We enjoyed it with Broccoli, but you could enjoy this over greens, or any veggie of your choice! I hope you enjoy! It was truly a refreshing change to the weekly food.
